Depending on the ride, they can get taken apart and put into storage for the winter season.
Most coasters have a building that houses the trains. Those buildings are used as storage and maintenance. Merry-go-rounds and ferris wheels will get their cars or horses removed and placed into storage, as well as sky rides.
The down time for amusement parks is spent with maintenance doing general ride maintenance, clean ups, and repainting.
